Honey Whipped Ricotta with Lemon + Thyme

Ingredients:

Whipped Ricotta with Lemon and Thyme
  • 15 oz whole milk ricotta cheese

  • 2 tbsp honey

  • 1\2 lemon, zested. Save some for garnish.

  • fresh thyme, 2 sprigs. Save some for garnish

  • 1 baguette, 1 inch slices

Directions:

Start by whipping the ricotta cheese, you can either do it by hand in a mixing bowl or have your electric mixer do the work for you. Mix until light and fluffy, about 3-4 minutes. Add the honey, lemon zest and thyme, stir to combine and set aside. 

Slice your baguette into 1 inch slices and place on a sheet tray, brush with a little olive oil and place under the broiler. Keep a close eye on it, you only want to crisp your baguette.  

Spoon the ricotta mixture onto a few slices of the baguette, serve the rest of the ricotta in a serving bowl and top with an extra drizzle of honey and any leftover thyme leaves/lemon zest if you have them. ENJOY!
